Oh man.  For books, there are so many.  It is hard to know which ones will be followed.

 

The Han Solo trilogy - These are just Han Solo adventures prior to episode 4, fun to read.  http://en.wikipedia.org/wiki/The_Han_Solo_Trilogy

 

There is the Jedi Academy Trilogy which takes place a few years after the original series.  Luke running a Jedi Academy http://en.wikipedia.org/wiki/The_Jedi_Academy_trilogy

 

There is the Trhawn trilogy, considered by many to be one of the best.  Definitely great books, they are just adventures like the original movies, take place five years later http://en.wikipedia.org/wiki/Thrawn_trilogy

 

Splinter of the Mind's Eye is another great one.  This has a ton of lore in it that is never covered in the original series/books http://en.wikipedia.org/wiki/Splinter_of_the_Mind%27s_Eye

 

There is another Young Jedi Knights series which covers Han and Leia's kids.  These are more geared toward young teenagers, easy reads.  Might be worth checking out if the new movie is going to be about them though.  http://en.wikipedia.org/wiki/Young_Jedi_Knights

 

One of my favorite series was the X-Wing Rogue Squadron series.  It was all new characters to us for the most part but fun to read.  Especially the first four before the writer changed.  http://en.wikipedia.org/wiki/Star_Wars:_X-wing_(book_series)

 

Anyway, in my teenage years I read about 50 different Star Wars books.  I know there have been a ton more that came out in the last ~15 years that I haven't read that might be good.

Those are all great suggestions. Unfortunately, when Disney took over they basically wiped the slate clean, so those are no longer considered canon. Only the 6 movies, the Clone Wars series, Rebels series and anything (books, comics or movies) that have come since or after they took over will be canon.

@nando Aftermath, a novel set to be released in early September will be the first of a trilogy that takes place during the years after Jedi leading up to The Force Awakens that should fill in some of the gap. If you are interested in finding out what happens during those 30 years Id start there.
