I always thought they were the invention of some Jewish guy in L.A.

I've now read it was invented in  different Arizona restaurants or in Sonora, México.

Either way, a very tasty treat.

Yeah, the Arizona story is 1922 by some very white sounding woman named Monica Flin. 

El Cholo in La Habra started up in the early 20's and the have their version of enchiladas from 1923 that are served layered with an egg on top. One of the best meals I've ever had.

El Cholo was in LA on Western in the 1920's.  La Habra was the first expansion in 1962.

It’s tough for me to find a chimichanga without meat but I’ve had a few with beans instead of meat and they were pretty good.
