At least they only travel to Toronto after the game (maybe 1.5 hours in the air), plus the game today is at 4:00pm PST instead of the normal 5:00pm PST.

Because they are contracted to play that many games.  Pretty simple actually.

 

MLB has contracts with the umpires, players.  Individual teams have contracts with food service companies, employee unions and television providers.
