So, What's For Dinner?

No dinner for DR.  I killed an Indian food buffet today.  Had to bail on my spin class because I was afraid I'd dust the room and I didn't want to do that to the others.  Now I feel like a pig. 

 

But the Injin food was solid.  Chicken tikka masala, rice, naan, yogurt, lentil curry, a couple samosas.  I did three rounds.  194 lbs. before lunch, 198 after.  196.5 post-reading break.

Grilled eggplant, zuccini, roasted peppers, mushroom and asparagus. Green leaf salad with grilled apples, pears and raspberry vinagrette. Spanikopita spinach phyllo triangles. Baked brie wrapped in puff pastry stuffed with apricots. Brick oven round bread stuffed with hummus surrounded by toasted pita triangles. And an ice cold brewskie to wash it all down.

Must be nice to have a husband who cooks

Oysters last night. Picked up a bag of 60 of them the other day from an Oyster farm here in Washington.

 

Usually have them raw, but went in a different direction last night. 

 

Baked them first to get them to pop open a little (easier to shuck). Half shelled them and cleaned, added my butter/habanero/lemon/pepper sauce to each half-shelled oyster, sprinkled parmesan cheese on top of each oyster, then stuck them back in the oven though this time on broil for about 6-7 minutes. This gave the oyster a nice crust on top with the cheese and cooked the oyster perfectly. The texture was like juicy chicken. Very good (see attachments)

I am up in the mountains, but when we go down to the Valley (Merced) to do our big shopping, there is a huge Mexican chain store Rancho San Miguel, that carries the mesh bags of 2 doz Washington oysters for 14.99. We have tried many different recipes now, some close to yours. I always preferred raw myself, but there are so many ways to do oysters...especially the large ostiones..

Building a real smokehouse right now. Can't wait to smoke some this summer.
