I'm remodeling and was going to replace the old 70's era round phone jacks to rectangular ones to match the decor.

Any reason to even go through with this?

I was thinking of shoving the jacks into the wall, plastering over them, and keeping one jack accessible in case of whatever.

Phone lines are obsolete, right?

This is your opportunity to run ethernet and TV cable. 

 

Even if you don't need either one, run the cables anyway and terminate them in the attic, or under the house, where they can be spliced at a later time.

I am gut remodeling a 1908 Edwardian, and man the lengths someone went through to run phone like beautifully hidden next to molding. It must have taken then ages to do it so well.

I ripped most of it out.

Run cat5/cat6 everywhere if your walls are open. Even if you don't use it now, you will want it in the future. 10x harder / pricier to add post sheetrock.

The phone line thing is a total afterthought.

Yes.  Drywall and paint are done, and I would rather not chop any more holes in the walls.

If you open up a wall, It might be cheaper (and better) to just run some flexible plastic conduit from an accessible area into various wall cavities. Easy to fish whatever wire is eventually called for with a hole small enough to be covered with an interface plate.
