I don't buy the "convenience for our guests" line. They are hoping that diners don't read the bill too closely and add a gratuity based upon the "suggested" total rather than the actual one.

"A Long Island man was arrested in 2004 for refusing to pay an 18 percent restaurant tip. But the local district attorney dropped the charge, Time magazine reported, saying tipping is at the diner’s discretion."

restaurant business is the biggest scam ever.

how did they ever get the customers to subsidize the cost of paying for employee performance?

 

its so perfect.

employees are awesome? they get more tips. employer doesn't pay an extra dime.

employees suck? they get less tips, and leave. better ones come in. employer doesn't lose a dime.

Went to dinner last night and the bill had a line for Round It Up For Charity. The restaurant wants you to round up the bill and give the extra change to a charity they are affiliated with. So they get the charity tax break, you pay more and it also encourages you to round up the wait staff tip to keep it all even numbers.
