Sous Vide pork chops are great. I stuff them first. 

If you happen to have a vacuum sealer or have friends who also like pork chops then go to Costco they sell a whole pork loin for $17-$19. I got over 9 lbs of pork loin for $18. I sliced them into really thick pork chops and cooked it that way. I seasoned and stuffed them vacuum sealed them and threw everything I wasn't eating that night in the freezer. Just add an extra hour to the regular sous vide time when you want to cook them. It makes for a super cheap and easy meal.
