Don't let the lady's Asianness fool you. Her curry is meh. Let the curry paste sizzle in the oil first then add the coconut milk, a tablespoon of fish sauce, a few sticks of lemon grass and a couple of lime leaves. Now you can add the chicken back in and I always like to toss in some baby corn and maybe some of those tiny eggplants. Gives a nice variety of textures. If you use jar paste and want heat you'll almost certainly have to add the birdseye chilis
