My mom taught me to add milk to eggs to make them fluffier. My mother in law disagree with that, claiming it was only to stretch them further. 

My mother in law could cook worth shit.

I learned about that from a GF in high school and thought it was such an ingenious idea. Have used that method ever since.

i also like to add scallions to mine.

I found that if you are making an omelette if you roll it early as possible and slip it pan and all into the oven it rises like a soufle. We have a toaster oven that is the perfect size for a small cast iron skillet.

I only eat the yolks now. Little heavy cream. Lots of butter

Yeah, I always whisked with milk for fluffier eggs, but I can't remember the last time I had milk in the house. I just use olive oil and then, like Adam, a good amount of butter.

Not really fluffy, but they're eggs, who cares.
